I have been in search for an awesome vegan Caesar dressing recipe. I really liked the ensalada de Caesar at Gracias Madre but learned that they use nutritional yeast and I don’t feel to good after eating it. I recently made the avocado based vegan Caesar dressing from the Cafe Gratitude cookbook and though it was a tasty dressing, it was not a good Caesar replica. Then I stumbled upon Heidi’s recipe over at Adventures of a Gluten Free Mom, gave it a try and really liked it. I have used the dressing in a crepe wrap, on sandwiches, and yesterday made my first vegan Caesar salad. While my search has resulted in an awesome tasting Caesar dressing, my goal is to replace the vegenaise in the dressing with cashew cream. I will let you know how it goes when I try it out.
Yesterday’s salad was extremely simple as a Caesar is supposed to be. Here are the ingredient substitutions for my healthy, gluten-free, vegan Caesar salad:
Romain = Kale (kale is super rich in vitamins and minerals)
Dressing = Vegan and Soy Free Caesar Dressing
Croutons = Mung Bean and Lentil Spouts (really nice crunchy substitution)
Parmesan Cheese = I am Focused: Brazil Nut Parmesan Cheese (Cafe Gratitude)
The end result was a tasty salad. Enjoy!
