Vegan Fish Taco

I made these yummy tacos for dinner tonight and I just had to share.  They were simple and flavorful!  This was my first vegan “fish” taco.  Actually, I can’t recall ever making a fish taco in my omni days.

I don’t have an exact recipe so if you have any questions just let me know.

Vegan Fish Taco

The “fish” was made from king oyster mushrooms (1 mushroom made 3-4 tacos). Make a thick flax mixture with water and flax meal. Add salt, cumin, paprika, red pepper (cayenne, habanero, etc), onion powder and garlic powder. Cut the mushrooms into bite size pieces and stir into the flax mixture. In a separate bowl make the coating with cornmeal, salt, onion powder, annatto, garlic powder and paprika. Toss the flaxed mushroom pieces in the cornmeal coating and sit to the side. Once all of the mushroom pieces are coated, place in a heated and greased cast iron skillet, spray with cooking oil and broil on high for 5-7 minutes until crispy. Remove from oven.

Creamy Avocado Dressing:
Mix a half avocado with lemon juice, about 2 tablespoons cashew cream or vegenaise, cilantro, chili powder and onion powder. Mash and mix until smooth.

I used a mixture of shredded red cabbage, radish greens, and kale; diced radish; and sliced spring onion.

Assembling Your Taco:
You can use a hard or soft taco shell, first add your oyster mushrooms and spoon on the avocado cream sauce. Top with the greens mixture, radish and spring onions. I also used some salsa picante for a little extra heat and the vinegar of the hot sauce contrasted well with the fatty avocado sauce.

    Ooohhh….I was just having a vegan fish taco the other day at this restaurant and thought there was no way I could replicate it. I guess I assumed too fast. This recipe looks great!

      Thanks! I think I made tacos 3 more times after these. One of my many favorite foods.
